Inga edulis (Ice Cream Bean)

An attractive, medium-sized tree which is prized for not only it’s unique fruit, but is also a lovely ornamental specimen. Foliage is a long, glossy, dark green leaf with new growth emerging a reddish-bronze tone. Depending on the climate and exposure to frosts, it can be natural to drop it’s leaves over winter. Fragrant, white, puffball flowers in spring and summer.

The Ice Cream Bean is in the legume family. Producing large pods (up to 1m long) filled with sweet, cotton wool-like flesh that tastes like vanilla ice cream. Fruit can be eaten raw or roasted. Seeds can be cooked and consumed like a vegetable. Harvest autumn through winter.

Prefers a position in full sun or light shade with adequate moisture through dry periods. Protect from frost. This plant is an evergreen plant in warm, frost free climates and will drop foliage otherwise. Mulch well to protect roots. Fertilise spring through autumn.
